The fresh leaves of this plant are processed by steam distillation method to get curry leaf oil. The quality of the curry leaf oil will be poor if it will be processed under normal pressure. The oil that is extracted is yellow in colour and has strong fragrance and is bitter sweet in taste. The average amount of oil that is produced is between 0.12% and 0.20%. The essential oil of curry leaves contain alpha and beta pinene as well as caryophyllene which is found in clove and cinnamon as well.
